Is it possible to grow edible mushrooms on garden waste?

A new partnership between the City of Copenhagen and the company Beyond Coffee hope to be able to answer that question within the coming months.

Sustainable mushrooms? Yes please!  

The idea is to use garden waste collected in Copenhagen as a growth medium for edible mushrooms, which later can be sold to selected restaurants in Copenhagen.

The potential for using waste as a growth medium has already been stablished as Beyond Coffee base their business model for producing high-quality oyster mushrooms on previously-used coffee grounds.

If the initiative becomes more than just a good idea, the next step would be to upscale the production in a setting for garden waste, so that the residue can be turned into compost.
